Julieanne Reilly entered this delicious starter into our Mum’s Best Dish competition. She says: ‘This is my Mum’s favourite dish, we have it for lunch and it is perfect as a starter for dinner. Everyone loves it because it’s so tasty!’ This salad-like starter doesn’t have exact measurements so you will be able to adapt it to your situation. It’s just as lovely as a posh lunch for one as it is a start for the family.

Ingredients

  • Brioche
  • Pesto
  • Olive oil
  • Goat's cheese
  • Onions
  • Brown sugar
  • Rocket
  • Sunblush tomatoes
  • Pine nuts
  • Balsamic vinegar

Method

  • Slice brioche and then lightly toast. Mix a little pesto and olive oil and trickle onto the toasted brioche.

  • Place the goat’s cheese on top and put the brioche back into a oven to warm the goat’s cheese, then place on a plate of rocket.

  • In a pan, slice some onions and fry in a little olive oil and brown sugar so that they caramelise then place on the top of the brioche. Add a few sunblush tomatoes.

  • In a pan, toast some pine nuts and add to the plate. Then warm some balsamic vinegar in a pan until it reduces and drizzle over.
