Fluffy mulled wine marshmallows would a lovely little homemade Christmas gift. Perfectly soft and bouncy, these little bites have all the flavours of Christmas in a marshmallow and it only costs £3 to make around 50. You can package them up nicely in cellophane tied with ribbon or in recycled jam jars. If they don't make it that far and you end up eating them all, we won't judge...
Ingredients
- 3tbsp icing sugar
- 3tbsp cornflour
- 125ml smooth orange juice
- 20g powdered gelatine
- 1tsp vanilla extract
- 1tsp mulled wine spiced syrup
- 400g caster sugar
- 50g liquid glucose
- 2 egg whites
- Zest 1 orange
- Edible glitter

Method
Sift 2tbsp icing sugar and 2tbsp cornflour over a baking tray lined with baking paper.
Pour the orange juice into a pan and sprinkle over the gelatine. Place over a very low heat and stir until dissolved. Turn off the heat and stir through the vanilla extract and mulled wine spiced syrup.
Put the caster sugar and glucose in a clean pan over a low heat and add 225ml water. Stir until the sugar has dissolved. Put a sugar thermometer in the pan and turn up the heat to boil. Once it reaches 100C, whisk the egg whites to a stiff peak in a bowl and set aside.
When the sugar reaches 118C, turn off the hob and remove the thermometer. Pour the gelatine mix into the syrup and stir until combined.
Start whisking the egg whites as you begin to pour over the syrup, avoiding the beaters. When the mix starts to thicken, carry on beating at a higher speed for 10-15 mins until it’s almost cooled.
Pour the mixture onto the prepared baking tray. Sprinkle over orange zest and glitter and leave to set in a cool place.
Turn the set marshamallow onto a board dusted with icing sugar and cornflour. Cool, cut into squares and serve, or pop into pretty gift bags.
