This inventive roast chicken recipe uses only 4 ingredients but the results are amazing. A great twist on a Sunday lunch classic

Ingredients

  • 2 large uncooked chicken
  • 4 oranges
  • 2 tbs. fresh mixed herbs
  • 1 cup walnut nut oil

Method

  • Preheat oven to 180°C. Place chickens in a baking paper lined roasting tray breast side up.

  • Drizzle with oil. Grate the skin of one of the oranges and juice both oranges over the chicken.

  • Finally sprinkle herbs over the top and roast chickens for 11/2 hours or until cooked to your liking.

  • Remove from oven and cover with foil, allow to rest for 5 minutes before cutting and serving.
