Oreo ice cream sandwiches take a popular biscuit and transform it into the perfect frozen treat. Using condensed milk ensures this ice cream is so easy to make, you don’t even need an ice cream machine. The cocoa cookies taste just like an Oreo biscuit, but in giant form, and make the perfect casing for these Oreo ice cream sandwiches. This Oreo ice cream sandwiches recipe makes enough biscuits for 10 sandwiches, and 1.2l ice cream, so you can save the rest to enjoy later.

Ingredients

For the milk ice cream

  • 1 tin (397g) condensed milk
  • 1tsp vanilla extract

For the biscuits

  • 225g butter
  • 200g caster sugar
  • 4tbsp golden syrup
  • pinch of salt
  • 300g plain flour
  • 1.5tsp bicarbonate of soda
  • 60g cocoa powder

Method

  1. To make the ice cream, simply mix together the milk, condensed milk and vanilla until well combined. Either churn in an ice cream machine or place in the freezer to set. If using a freezer, after one hour, remove and mash with a fork. Continue to do that every hour to stop large ice crystals forming.  The ice cream should take a minimum of 4-5hrs to set.
  2. To make the biscuits, preheat the oven to 180C. Beat together the butter, sugar and syrup until creamed well. Stir in the flour, salt, bicarbonate of soda, and cocoa. Roll into 20 large balls, almost the size of a golf ball. Press down on them with the base of your hand or the back of a spoon to flatten. Place on a baking sheet and bake for 15mins until crispy and cooked through. Leave to cool on a wire rack before storing in a container.
  3. To sandwich together, cut rounds the same size as the biscuits out of the ice cream. Sandwich a round of ice cream in between 2 biscuits and serve.
