You cannot beat a good, homemade Victoria Sponge. It's so quintessentially English. A yummy light sponge, filled with homemade strawberry jam, fresh cream and dusted with icing sugar. Accompanied with a pot of fresh Ringtons tea......heaven! :P

I love a good Victoria sandwich cake. It is the first cake that my Gran taught me to make. It is even better with homemade jam, buttercream and a sprinkling of sugar on the top.

I always say that you can never beat and properly made Victoria sandwich, especially when put together with a decent fruit conserve. Eating it with a lovely strong cup of tea reminds me of "taking tea" with my grandmother eons ago. Ah, happy days ......

I think Victoria Sponge Cake is the best thing to have with an afternoon cup of tea as it says to me "that you can enjoy a little sweet treat with a refreshing cuppa, without feeling gulity about the pleasure it gives".

This would be fab with a nice cup of tea. nothing beats the taste of a light sponge with cream and jam.
