I would do this as a summer party cake. How about adding some coconut for a real tropical taste and decorating each slice with a cocktail umbrella -or even an indoor sparkler!

I would omit the rum and add some cinnamon and raisins into the sponge.

this looks really nice - i wonder how tinned mandarins would work? and maybe orange liqueur instead of the rum?
