Never know what to do with leftover sausages or salsa dip? Turn them into a new family meal of spicy sausage rice
- 1 onion, chopped
- 1 red pepper, diced
- 1tbsp olive oil
- 225g wild and basmati rice
- 450ml stock
- 6 cooked sausages, sliced
- 1 pot of fresh salsa dip
Sauté the onion and pepper in the oil until tender. Stir in the rice and stock, cover and simmer for 20 mins until the rice is tender.
Stir in the sausages and sauce and simmer uncovered over a medium heat for a further 5 mins or until hot. Add the chopped parsley and serve in bowls.
