Strawberry daiquiri sundaes are an adult-only treat that makes a fab choice for finishing off a heavy meal. If you're entertaining friends, this is the perfect recipe to bring out once everyone is full. The martini glasses are really elegant and mean the servings are perfect for finishing off a meal. Strawberry daiquiri sundaes are great enjoyed outdoors if the weather permits, but if not, they're just as tasty indoors! You can make these sundaes with your favourite berries - blueberries work really well, as do raspberries too. Get creative and see what you can make - your friends will love them!
Ingredients
- 175g caster sugar
- Zest and juice from 6 large limes
- Green food colouring (optional)
- 60ml white rum
- 125ml soda water
- 8 scoops (or 500g) strawberry or raspberry sorbet
- A few lime slices, halved
- Strawberries and mint sprigs, to serve

Method
- To make the lime granita, dissolve the sugar into 150ml water in a small saucepan over a low heat, then leave to cool. Mix in the lime zest and juice, a few drops of food colouring (if using), and the rum and soda water.
- Pour into a small wide Tupperware, or into a good-size freezer bag with a seal and place on a baking tray. Freeze for 2 hours, then pull out of the freezer briefly every 30 mins to roughen up with a fork – do this over the next 2 hours, then freeze overnight.
- Chill 8 martini (or stemmed) glasses ready to serve. Add a scoop of sorbet, top with a good sprinkle of granita and finish off with a slice of lime, strawberry halves and a sprig of mint – don’t forget the spoon!
