Vegetarian shepherd's pie with sweet potato

"Making the decision to go veggie is a big one, but in 2013, it doesn't need to mean missing out or eating bland and boring food. With more and more people becoming vegetarian every year, the food market has changed, launching new products that make everyday cooking so much easier for a vegetarian.

From Tofurkey to Facon and even Linda McCartney prawns - you'd be hard pressed to not find a veggie substitute to use to create your favourite meat, chicken or fish dishes. As a vegetarian of 18 years, I know a thing or two about meat-free cooking and the ways to make the most out of simple ingredients.

I've found that I can still enjoy almost all the dishes I loved before, just by making a few smart swaps. Saved in my online recipe book is this Quorn sausage casserole - a great winter mid-week dinner and family favourite. When takeaway cravings set in, I whip up a simple dhal served with rice and poppadums or homemade pizza topped with artichokes and courgettes. And for vegetarian pasta dishes, a jar of pesto in the cupboard is life saver when you want a 10-minute dinner - just chuck in your favourite choice of veg and you're away.
