🥗 Roasted Garlic Kale Salad ⏲ Under 15 mins | Serves 1 Here is yet another filling & delicious salad! Prepared the items last night & all I had to do this morning was toss it all in my lunch bag for work. And it's another one of those hot kale salads 😉 Like I said in my last kale salad recipe, heating it up makes it taste so much better & eliminates the rough bitter taste of the kale 🌿 And I used pasta sauce as my dressing because why not?! And have you heard of kohlrabi? It's the new trendy vegetable full of nutrients & great for salads! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ What's in my bowl🥣 ▫️Handful of Kohlrabi Salad Blend (@traderjoes) ▫️1/4 cup Butternut squash, cubed ▫️1/4 cup Brown rice, cooked ▫️1/4 cup Roasted garlic alfredo pasta sauce (@classico_sauce) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cook the brown rice in 1/2 cup of water until all is absorbed. Cube the butternut squash. In a bowl, add in the Kohlrabi Salad Blend which has shredded kohlrabi, red cabbage, kale, & golden beets. Yum! Add in the squash, rice, & creammmyyy pasta sauce. Heat up everything in the microwave for 3 mins. Top with hemp seeds & serve hot! (I usually mix everything together beforehand, except for the sauce. And store it in a tupperware so it's ready to take to work in the morning) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ It's another Monday so hope you guys are getting a great start to your week 🎉
