Darren’s Top Tips for filleting fish
- You need to have a sharp knife – blunt knifes tear the fillet.
- Slice in at the next of the fish then slide the knife down the side.
- Always push the knife away from you.
- Pull the fillet from the bones.
- Trim off any stomach area.
- You get two fillets from a round fish and either 2 or 4 from a flat fish.
