Do you dream of driving off to the seaside in your very own campervan? Then you’ll love these cute and summery campervan cupcakes. Follow our step-by-step recipe to make your own.
Colourful campervans headed for the beach are a symbol of the British summertime, and our cupcake queen Victoria Threader has made some brilliant campervan cupcakes to enjoy at the seaside, or indoors with a cuppa.
- 1 batch of 12 basic cupcakes
- 1 batch of basic meringue buttercream
- 130g white modelling paste
- Food colour pastes in red, yellow, blue, green, tangerine, black and silver (Victoria used Sugarflair’s Christmas Red, Egg Yellow, Sky Blue, Party Green, Tangerine/Apricot, Black Extra and Silver).
- Gin or vodka
Roll the white modelling paste out to 2mm thick and cut 12 x scalloped circles, leaving them to dry on a drying sponge.
Stand the piping bag in a tall glass so you have both hands free to fill the piping bag.
To ice this swirl, start in the centre piping out towards the paper case, follow around the edge of the paper and then work your way back onto the middle finishing in the centre by pushing down slightly and then pulling up quickly. They don’t have to be perfect as the topper will cover up any mistakes.
