The secret, he says, is brining your meat before you begin. This quick and simple solution is made from a mixture of sugar, salt and water. At Honest Burgers they serve their chicken burger with a mustard, lemon and black pepper mayonnaise, crunchy lettuce and juicy tomatoes for a simple but delicious meal. Tom also shows you how to cook a chicken breast to perfection, leaving it cooked through but still succulent and juicy. Once you’ve mastered how to make a chicken burger in this simple way you can have lots of fun giving it your own twist. You could add a Cajun rub to the chicken for something a little bit different, or serve it up with cheese, bacon and pickles for a more American feel. However you serve it one thing is for sure, it’s going to be delicious. This recipe serves four, so make sure to scale it up or down if you’re cooking for just a couple of people or a big crowd.
For the brine:
- 500ml water, plus 1.5 litre cold water
- 2tbsp sugar
- 3tbst salt
For the burgers:
- 4 free range chicken breasts, butterflied
- 1tbsp olive oil
- 1 tomato, thickly sliced
- 1 little gem lettuce, shredded
- 4 burger buns, sliced in half
For the mustard mayonnaise:
- 4tbsp mayonnaise
- 1tbsp Dijon mustard
- ½ lemon, juice only
- Black pepper, to taste
- Chips, to serve
To brine the chicken combine the sugar, salt and 500ml water in a small pan. Bring to the boil, turn down the heat and simmer until the sugar and salt have dissolved. Add the remaining cold water and leave to cool completely. Add the butterflied chicken breasts and leave overnight.
Remove the chicken breasts from the brine and leave to dry out slightly. Add the olive oil to a hot pan and cook the chicken breasts for 3-4 minutes on each side until they are golden on the outside and cooked-through in the middle.
Meanwhile, for the mustard mayonnaise, combine all the ingredients and stir thoroughly. Add a tbsp of the mixture to each burger bun. Top with shredded lettuce. Add the tomato, then the chicken breast and top with the other half of the burger.
Serve with chips and enjoy!
