This is the perfect Valentine’s Day pud – it’s quick and simple to prepare, it looks great and it tastes sensational! The texture, too, is utterly sensual. It’s naughty (we can’t pretend it’s very healthy) but it’s very, very nice! This is best made on the day, several hours before serving. So rustle this up, pop in the fridge, and get ready to enjoy a fabulous evening.
Ingredients
- 150ml double cream
- 100g dark chocolate (at least 50% cocoa solids)
- 20g butter
- 1tbsp brandy

Method
- Bring the double cream to the boil in a small pan, then remove from the heat.
- Snap the chocolate into pieces and add to the cream, along with the brandy. Add the butter and whisk until a smooth and glossy texture is achieved.
- Pour the chocolate mixture into two small coffee cups and chill in the fridge for an hour or two to set. Check after half an hour to see how it’s setting and swirl with a fork to decorate (see pic).
Top Tip for making Dark chocolate mousse with brandy
To add an extra bit of finesse, decorate with a sprinkling of chocolate shavings.
