The crunchy snap of a shard of brittle is a noise we all know and love. Peanut brittle is the more traditional choice of nuts, but this recipe uses almonds instead. These sweet treats make great foodie gits, just wrap in cellophane and pretty ribbon. Be extra vigilant whilst making caramel, prepare all of the ingredients weighed and measured beforehand as this needs attention and quick handy work. Plus you need only need 4 ingredients and 15 minutes to make them.


  • 100g golden caster sugar
  • 50g butter
  • 4tbsp water
  • 100g toasted almonds


  • Put the sugar, butter and water into a non-stick frying pan and heat gently. Continue to stir until the sugar dissolves. Then increase the heat and boil for 4-5mins. You’re looking for a light golden brown colour.

  • Add the nuts and stir once before tipping onto a greased baking sheet. Leave to cool and then snap into pieces to serve.
