This is a wonderful, effortless and super simple pudding for those late summer nights relaxing in the garden. With only 3 ingredients, it’s cheap and so easy even the kids could make it for you! Crunchy spiced biscuit, sweet raspberries and a cool dollop of whipped cream; perfection!

Ingredients

  • 250g amaretti biscuits
  • 2 punnets of fresh raspberries
  • 300ml carton of whipping cream, whipped to soft peaks

  1. Roughly crush the amaretti biscuits. Take whichever glasses your using and place a layer of the biscuit rubble in each of the glasses. Top with a layer of raspberries, then cream. Repeat layering and finish with a few fresh raspberries. Serve.
Top Tip for making Amaretti raspberry cream tower

To make a quick raspberry sauce simply heat a few raspberries in a saucepan and add a spoonful of sugar to sweeten. Allow the berries to break down and thicken and serve with the pudding.
