If you love apricots, why not try this recipe for a delicious apricot tart? You’ll be surprised at how just how easy it is.
- Ready-rolled puff pastry
- 25g butter
- 25g caster sugar
- 1 egg
- 25g ground almonds
- 1tsp plain flour
- 4 apricots
Cut out a 20cm round from a sheet of ready-rolled puff pastry and put it on a baking tray.
Beat together the butter, caster sugar, 1 egg yolk, almonds and flour. Spread on the pastry, leaving a 2cm border.
Halve and stone 4 apricots, arrange on top and bake at 200°C (180°C fan, gas mark 6) for 15-20 mins. Serve warm and enjoy.
