Your whole family are going to love tucking into this mouth-watering stack of bacon and maple syrup pancakes at the weekend or Pancake Day. The sweet sticky syrup and the saltiness of the bacon work wonders together. These pancakes are so easy to make too and the pancakes themselves can be made ahead of time and warmed up when they’re ready to be served. This recipe also uses cheese to make these pancakes extra special, but if you’re not a fan you could always leave it out.
- Batch of scotch pancakes
- 12 rashers maple cured bacon
- 6tbsp grated Monterey Jack cheese
- Maple syrup, to drizzle
Make the batter for pancakes.
Grill rashers of bacon for about 2-4 mins under a hot preheated grill.
Cook the pancakes.
Serve pancakes stacked with crispy bacon rashers and liberally pour over maple syrup.
