Shoehorning a fruit into your dessert can only be a good thing – one of your five-a-day in treat form! These delicious baked cinnamon apples are stuffed with a gooey oaty filling that gives the whole thing a sort of crumble flavour, which is perfect for warming you up on a winter night. You could even reheat these baked cinnamon apples the next day and have them as a warming breakfast if you’re feeling like you might need a sweet start to the day. If you’re feeling virtuous serve these with fat-free crème fraiche, but if you want to be good to yourself why not try a big old dollop of thick double cream? If you’re not a huge fan of cinnamon you can always experiment with other spices – nutmeg or a tiny amount of allspice would also be delicious.
- 4 medium apples
- 80g rolled oats
- 55g coconut sugar
- 1tbsp melted coconut oil
- ½tsp cinnamon
- ¼tsp nutmeg
- 1 cup of hot water
- frozen yoghurt or fat free crème fraiche, to serve
Preheat the oven to 175C.
Combine the rolled oats, coconut oil, coconut sugar, cinnamon, nutmeg and vanilla until combined and sticky.
Wash and core the apples.
Place the cored apples in a deep baking dish. Spoon the filling into the apples until it’s about to overflow.
Pour a cup of water into the bottom of the dish, cover with foil, and bake for approx. 1 hour until the apples are soft and the sugar has melted into a syrup. To test, poke a knife into the centre of the apple; it should slide in easily with no resistance.
Serve the baked cinnamon apples warm with a scoop of frozen yoghurt or a dollop of fat free crème fraiche.
