A lip smacking tasty barbecue sauce is just the thing to perk up chicken, ribs, chops and burgers. You can brush this sauce over the meat as it’s cooking on the barbecue or in the oven, and serve it as a relish on burgers and bangers. We’ve used smoked paprika to give that smoky barbecue flavour even if you’re cooking indoors. You can use this BBQ sauce to make the popular pub dish, Hunter’s chicken. Simply wrap some chicken breasts in bacon, place in a baking dish, spoon over a liberal amount of BBQ sauce, sprinkle with grated cheese and bake in the oven at 190°C/350°F/170°C/Gas Mark 5 for about 35 mins until the chicken is cooked through.
- 1tbsp sunflower oil
- 1 onion, chopped
- 1 garlic clove, crushed
- 4tbsp mango chutney
- 4tbsp tomato ketchup
- 4tbsp white wine vinegar
- 1tbsp sweet chilli sauce
- 2tsp smoked paprika
- 227g can chopped tomatoes
- 2tbsp soft light brown sugar
Heat the oil in a pan, add the onion and cook over a medium heat for 5 mins until softened.
Add the remaining ingredients, bring to the boil, stirring, then reduce the heat and simmer for 5 mins, stirring occasionally, adding a little water if the sauce becomes too thick. Season with salt and freshly ground pepper.
Blend the sauce until smooth with a stick blender, food processor or blender. Brush over chicken, steaks, ribs and chops while cooking or use as a relish to serve with burgers and sausages.
This BBQ sauce will keep in a covered container in the fridge for up to 1 week.
