BBQ prawn skewers are quick and easy to cook, and make a light and eye-catching change from grilled chicken or meats. Like most shellfish these prawn skewers are best enjoyed straight away, although these do keep well for a day or two if stored in an airtight box in the fridge. You can then enjoy them cold in sandwiches or salads if you fancy a protein hit at a later date. This tasty summer recipe serves four people but can quite easily be multiplied to feed a bigger crowd, or to give you some leftovers to enjoy over the next day or so. Because of their delicate flavour our prawn skewers don’t need too much on the side – think salad, steamed potatoes or even just some juicy corn on the cob. - 12 raw king prawns
- 1tbsp sea salt
- 2 limes, cut into wedges
- For the dipping sauce
- 2tbsp fish sauce
- 2tbsp rice wine vinegar
- 2tbsp sweet chilli sauce
- 1tbsp freshly grated root ginger
- 1tbsp caster sugar
Grill the prawns on the barbecue for 5 minutes, turning once, until charred and completely pink.
Mix together all the dipping sauce ingredients.
Scatter the sea salt and lime wedges over the grilled prawns and serve with the dipping sauce.
