Beef rogan josh is a hearty and delicious Indian stew to warm you through on cold and dark evenings. The exotic and aromatic spices will ensure that this week night dinner is never boring. This beef rogan josh is not only healthy but also filling.

Ingredients

  • 4 tbsp vegetable oil
  • 900g stewing beef, cut into 3cm cubes
  • 2 large onions, finely sliced
  • 5cm piece of root ginger, peeled and grated
  • 3 cloves of garlic, finely chopped
  • 1tsp garam masala
  • 1/2 x 283g jar Patak’s rogan josh spice paste
  • 1tbsp tomato puree
  • ¾ltr hot beef stock
  • 450g sweet potatoes cut into 2cm cubes
  • small bunch of fresh coriander, chopped, optional
  • 1 red onion, finely sliced for garnish, optional

Method

  1. Heat 1tbsp of vegetable oil in a large frying pan and fry the beef in 3 batches, using a 1tbsp of vegetable oil for each batch. Take the beef out and set it aside.
  2. Add the 1tbsp oil and onion and gently fry on a medium heat for 5 minutes, or until slightly browned. Add the grated ginger, garlic, garam masala, curry paste, and tomato puree. Fry for 1 minute or until fragrant and the tomato paste has been cooked out.
  3. Return the browned beef to the pan, add the beef stock, slightly season and simmer for 1 hour.
  4. Stir in the sweet potato and cook for a further 30 minutes or until the sweet potatoes are cooked through. Add more stock if needed. Cook and chill if preparing ahead.
  5. Warm through in the oven for 30 minutes. Add the coriander and onions on top and serve.
