This fragrant and super healthy salad is a lovely addition to the dinner table. Sweet tomatoes, piquant kalalmata olives and starchy chickpeas make this a super-food recipe; mixed together with a zesty pesto dressing, this salad is sure to be a winner as a side dishto grilled meats or top with feta cheese to make it a wonderful vegetarian main meal.
- 1 tin of chickpeas, drained
- 300g punnet of cherry tomatoes
- 100g whole kalamata olives
- 4tbsp pesto
- 1 lemon, zest and juice
Combine the pesto, zest and juice of the lemon in a large bowl. Tumble in the chickpeas, tomatoes and olives and toss all together to combine. Serve.
Top tip for making Chickpea pesto salad
If somebody doesn’t like pesto, simply toss the salad in the lemon juice and olive oil instead.
