Watermelon is at its best from late July to October. Juicy and sweet, it provides the perfect refreshing snack. Combining the sweet fruit with bitter dark chocolate is a great mix and topping each bite with crunchy pistachio nuts turns this simple fruit into a show stopping dessert. If you can’t get any watermelon, try this recipe with strawberries or slices of banana; both will taste great.
Ingredients
- 1 watermelon, flesh removed and cut into wedges
- 200g dark chocolate
- 50g pistachio nuts, chopped

Method
- Start by melting the chocolate in a heat resistant bowl over a saucepan of simmering water. Make sure the bottom of the bowl is not touching the water though. Once completely melted, allow to cool briefly.
- Take each wedge of watermelon and gently dip each one into the melted chocolate then place on a serving platter. The chocolate will set fairly quickly, so before it does, sprinkle some pistachios over the top. Chill in the fridge for 20mins before serving.
Top Tip for making Chocolate-dipped watermelon
For a speedy way to melt chocolate, simply put it in the microwave for short 30 second bursts, making sure you stir it at every interval.
