Chocolate strawberries with pistachios are a fuss-free dessert that is so easy you won’t know why you haven’t tried it before! If you’re going to a picnic, having a BBQ or even want a quick and delicious light snack these are a must. We’ve used a rich dark chocolate in our chocolate strawberries recipe to complement the rich pistachio flavour, but you can tweak this depending on your chocolate preference – white and milk also work well. This is also a fantastic recipe to make with the kids and you could swap the pistachios for sprinkles to make them a bit more fun! The nuts bring the calorie count of these chocolate strawberries up but they’re loaded with nutrients, if you need an excuse to eat them!
- 250g strawberries
- 125g dark chocolate (70%)
- 50g unsalted pistachios
Line a baking sheet with greaseproof paper and set to one side on your counter.
Finely chop the pistachios by hand or blitz in a food processor. If choosing this method make sure you keep the pistachios in chunks to give a better crunch. If you blitz too much you’ll end up with a crumb, which can be a bit bitty.
Break up the chocolate and place in a heatproof bowl. Set over a pan of boiling water. Make sure the bottom of the bowl isn’t touching the water.
Stir occasionally, until the chocolate has melted, 3 – 5 minutes.
Remove the chocolate from the heat. Dip the strawberry tips into the chocolate. Roll the chocolate dipped strawberries into your chopped pistachios. Repeat with the rest of the berries. Set each finished strawberry on greaseproof paper.
Place the baking sheet into the refrigerator and chill for at least one hour before enjoying!
