Our clementine pancakes taste lovely and citrusy and are a great alternative to traditional lemon and sugar...
Clementine pancakes are perfect for those who love lemon and sugar pancakes but want something a little different… The tastebud-tingling mix of zesty orange flavours makes these quick and easy pancakes an indulgent treat that you’re sure to love. Our clementine pancakes have a boozy twist as we’ve chosen to use Cointreau for the syrup but you could also try our clementine vodka recipe… If you’re making these for children too just give the booze a miss!
- 4 clementines
- 4tbsp caster sugar
- 4tbsp Cointreau
- 4tbsp orange juice
- Our classic
- Crème fraîche, to serve
Remove skin from clementines and slice into rounds. Dissolve sugar in orange juice, then add Cointreau and boil until reduced to 2tbsp syrup.
Heat pancakes according to the packet instructions. Divide clementines between pancakes, drizzle with the syrup, then fold pancakes. Serve with crème fraîche.
Top tip for making Clementine pancakes
Instead of clementines, try caramelised apples, vanilla extract and a splash of Grand Marnier or a jar of Belgian chocolate sauce, sliced bananas and flaked almonds.
