Coconut ice lollies with rum take refreshing coconut water and combine it with fresh berries, a hint of mint and a boozy kick of rum to make the ultimate grown up ice lollies. If you want to make these coconut ice lollies suitable for kids, you can simply omit the rum from the mixture. These coconut ice lollies don’t only taste great, but look beautiful too. We used blueberries and raspberries for their bright colour and natural sweetness, but you could try any other berries or fruit you like, chunks of apple or fresh blackberries would work well. You can also use frozen berries to cut costs! The flavours of coconut and rum give such an exotic and tropical feel. You’ll be transported to sandy and sunny beaches with these coconut ice lollies, they’re like summer on a stick! Homemade ice lollies have less artificial additives and sweeteners than shop bought, and these coconut water based lollies are a much lower fat alternative to creamy frozen desserts.
Ingredients
- 350ml coconut water
- 75g caster sugar
- 6 fresh mint leaves
- 2 strips of lime peel and juice of 1 lime
- 3tbsp white rum
- 100g mixed berries (we used blueberries and raspberries)

- 6 popsicle moulds, we used Zoku

Method
- Place the coconut water, sugar, mint leaves, lime peel and juice in a saucepan and heat gently until the sugar has dissolved. Remove the pan from the heat and leave it to cool slightly. Discard the mint leaves, then stir in the rum.
- Fill Popsicle moulds with fruit. Pour over the coconut liquid and secure the sticks. Place in the freezer to set for a few hours Remove from moulds and serve.
