Smooth, creamy and studded with spiced fruits and crumbly pastry, this festive dish is the perfect way to use up any leftover mince pies. Easy to make, it’s a great no-fuss dessert, which children will love too. A great pud to have in the freezer for when those unexpected guests drop in


  • 500g vanilla custard
  • 280ml double cream
  • 8 mince pies


  • Mix the vanilla custard and double cream in a bowl, and put into the freezer for about 2 hours.

  • Break up the mince pies into bite-sized pieces, and mix into the ice cream.

  • Return to the freezer and leave overnight.

Top tip for making Easy mince pie ice cream

If you don’t have the time to make your own ice cream, leave a shop-brought pot to defrost until it is soft. Stir through the pieces of mince pie and freeze
