Smooth, creamy and studded with spiced fruits and crumbly pastry, this festive dish is the perfect way to use up any leftover mince pies. Easy to make, it’s a great no-fuss dessert, which children will love too. A great pud to have in the freezer for when those unexpected guests drop in
- 500g vanilla custard
- 280ml double cream
- 8 mince pies
Mix the vanilla custard and double cream in a bowl, and put into the freezer for about 2 hours.
Break up the mince pies into bite-sized pieces, and mix into the ice cream.
Return to the freezer and leave overnight.
Top tip for making Easy mince pie ice cream
If you don’t have the time to make your own ice cream, leave a shop-brought pot to defrost until it is soft. Stir through the pieces of mince pie and freeze
