This summery passion fruit smoothie with its subtle taste of elderflower makes a delicious and refreshing drink on a warm afternoon.
- 6 passion fruit
- 4tbsp elderflower cordial
- 375ml (13floz) natural yogurt
Halve the passion fruit and scoop out the pulp and seeds.
Place in a blender with the elderflower cordial and yogurt. Blend until smooth and creamy. Pour into glasses to serve.
If you don't like the seeds, strain the passion fruit pulp through a sieve before adding to the blender. And this smoothie is equally delicious using organic apricot or peach-flavoured yogurts.
