A wonderful fruity combination, this chutney is delicious eaten with a chunk of cheddar. Easy to make, this is a bit of a one-pot-wonder, as all the ingredients are cooked together to make a marvelously tasty and versatile condiment. Apples, figs, apricots and sultanas all blend to perfection. Add it to a ploughman’s lunch to give a bit of spicy bite, slip it into sandwiches to pep up some ham and cheese, or perhaps just enjoy a dollop with your favourite curry.

Ingredients

  • 550g apples, diced
  • 100g chopped dried figs
  • 100g chopped dried apricots
  • 50g sultanas
  • 5 cloves of garlic, finely chopped
  • 1tbsp grated fresh ginger
  • 400ml cider vinegar
  • 400g caster sugar
  • 1tsp salt
  • ½tsp cayenne pepper
  • ½tsp mixed spice

Method

  • Put all the ingredients in a stainless steel pan and bring to the boil. Turn the heat down and simmer for about 30 mins. Stir frequently to prevent the mixture from sticking, until it thickens to a jam-like consistency.

  • Allow the chutney to cool, before pouring into clean jars. Cover with non-metallic lids and store in a cool place.
