Our fish with peas is a light and easy fish dinner that’s cooked in one dish. We haven’t specified the best fish to use as any white fish will be tasty. If you’re looking for a sustainable but still tasty alternative to cod have a look for hake, Pollock and whiting. Lots of supermarkets have started stocking it and you could always try out your local fishmonger where possible. This recipe for fish with peas serves one but you could easy scale it up and feed the whole family. It’s deliciously light and healthy at only 400 calories per portion with only 4g of saturated fat! Ingredients

  • 250g or 1 potato, sliced
  • ½ green leek, sliced
  • 150ml fish stock
  • 2tbsp single cream
  • 30g frozen peas
  • 100g white fish
  • 1tbsp chopped parsley, to serve
  • ½ lemon, to serve

Method

  1. Preheat the oven to 200C, Gas 6. Lay the potato on the base of an oven proof dish with the leeks, top with fish stock and cover with a lid or tinfoil and bake for 35-40mins until potatoes are cooked through. Remove and remove the foil, test the potatoes to see if they are cooked.
  2. Pour over the cream and peas. Set the oven to grill. Place the fish on the potatoes (skin side up) and place under the grill for 5-7mins to cook through.
  3. Remove and top with chopped parsley, and serve with wedges of lemon.
Top Tip for making Fish with peas

You can use any white fish in this recipe. Hake makes a great sustainable alternative to cod and you might also like Pollock or whiting.
