This tasty and healthy chicken chow mein recipe is quick and easy to prepare after a busy day. If you fancy a greasy Friday night takeaway- why not try this healthy alternative instead? It’s packed full of crunchy veg with lots of flavour. The chow mein is a perfect meal the whole family can enjoy together. The Chinese recipe serves four – and, you can even double up on the portion size and take some to work the next day in a Tupperware. If you’re feeling adventurous you can add in any vegetables that take your fancy. Why not try adding mushrooms, bean-shoots or even crunchy carrots? It’s an easy way to get the kids to eat more veggies. Although this recipe uses chicken, you could even try using fish, meat or tofu instead.
- 2 spring onions
- 500g diced chicken breast
- 2 Romano peppers
- 160g mange tout
- 30ml toasted sesame oil
- 80ml hoisin sauce
- 60ml soy sauce sachet
- 260g medium egg noodles
Before you begin…Get all your ingredients and equipment ready. Skim through these steps. Wash your fruit and veg. Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins).
Now, let’s get started! Boil a kettle. Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a high heat. Meanwhile, chop the Romano peppers roughly. Tip: Slice into rings for speedy chopping!
Once the pan is hot, add the diced chicken breast and sliced Romano pepper and cook for 3-4 min or until the chicken is starting to brown.
Add the medium egg noodles to a pot and cover with boiled water until fully submerged. Bring to the boil over a high heat and cook for 5-6 min or until cooked with a slight bite. Once done, drain and set aside.
Once the chicken has completely cooked through (no pink meat!), add the mange tout and cook for 1-2 min further. Meanwhile, trim, then slice the spring onions.
Add the soy sauce, hoisin sauce and toasted sesame oil and cook for 30 sec.
Add the drained noodles and give everything a good mix up – this is your chicken chow mein.
Serve the chicken chow mein and garnish with the chopped spring onion. Enjoy!
