You might be surprised that the base for this green goddess salad dressing is avocado, which makes a really flavoursome, creamy and delicious dressing. Mix it up with rocket, tomatoes or any other green leaves that you fancy for a salad that can be enjoyed at any time of the day. Have a larger portion as a main at lunch, or a smaller one as a side to meat or fish.


  • 1 avocado
  • 75g soured cream
  • 1 garlic clove, crushed
  • ½
  • lemon
  • ½
  • lime
  • handful of tarragon, parsley and chives


  • In a food processor, blend the flesh from the avocado with the soured cream, garlic clove, the juice 
of ½ lemon, juice of ½ lime, 
large handfuls of tarragon, parsley and chives, 1-2tbsp cold water and some salt and pepper. Use this green goddess dressing on your salad – we love it with rocket, mixed green leaves and tomatoes.
