- 50g butter
- 50g plain flour
- 600ml whole milk
- whole nutmeg, for grating
Melt the butter in a saucepan. Stir in the flour to make a paste. Cook for 2 minutes, then season with salt and pepper.
Gradually add in the cold milk, stirring until smooth. Cook over a medium heat, stirring, until thickened (it will take at least 5 minutes).
Season and add freshly grated nutmeg.
