This lemon and herb mayo is very easy to make and it's a great companion to herb roasted potatoes. Spoon mayonnaise into a small serving bowl and mix some chopped parsley, mint and basil into it. The lemon zest and juice give the sumptuous mayo its fresh flavour. - 100g mayonnaise (we used Delouis)
- 1tsp chopped parsley
- 1tsp chopped mint
- 1tsp chopped basil
- Zest and juice ½ lemon

- Spoon the mayonnaise into a small serving bowl, then stir through the herbs, lemon zest and juice. Season with black pepper to your liking and serve.
