These lower-fat pancakes are a great way to enjoy a favourite breakfast treat if you're looking to eat healthier. 

Our lower fat pancake recipe uses fat-free plain yogurt and sweetener instead of normal sugar, all served up with a homemade, healthy berry compote. At just 128 calories per pancake, this is definitely a lighter way to enjoy a wholesome weekend brunch. They're also so easy to make and take just 15 minutes to prepare, so whether it's a friend-filled occasion or a post-workout meal, we've got you covered with a dish that will keep you full for many hours after you've eaten.

Ingredients

  • 100g plain flour
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • 40g porridge oats
  • 4 tbsp granular natural sweetener
  • 120ml fat-free plain yogurt
  • 5 tbsp skimmed milk
  • 2 medium eggs
  • 1 tsp vanilla extract
  • 2 tsp sunflower oil

For the berry sauce:

  • 250g mixed berries, thaw if frozen
  • 1tsp corn flour
  • 4 tbsp granular natural sweetener

Method

  1. Put the berries into a pan with 2 tbsp water, slowly bring to simmer. Blend the corn flour with a tablespoon of water, add to the berries with the sweetener and stir over a medium heat until the juices thicken. Remove from the heat.
  2. To make the pancakes, put the flour, baking powder, cinnamon, oats and sweetener into a bowl.
  3. Whisk the yogurt, milk, eggs and vanilla extract together then add to the dry ingredients and beat together to make a smooth batter.
  4. To cook the pancakes, heat a large non-stick frying pan on medium high, brush the base of the pan with oil. Drop 3 tablespoons of the batter into the pan, leaving a little space between each one. Cook for about 2 minutes, bubbles will come to the surface. When the underside is golden, flip the pancakes over and cook for a further 2 minutes.
  5. Remove from the pan, brush the pan with oil and continue to cook the pancakes. Serve topped with the berry sauce.

Want to lower the calories in these pancakes even more? Swap out the vegetable oil, which is used in the frying process, for a lower-calorie frying spray like Frylight - which works out to be just one calorie per spray.

Can I used wholewheat flour instead of plain flour?

Yes - you can swap the plain flour for wholemeal, or use a mix of the two. You may find the batter needs a little extra splash of milk to get the right frying consistency, if it feels too thick.
