Lassi is a traditional Indian yogurt drink that tastes a bit like a fruity milkshake. It's quick and simple to prepare, and a great way of getting the family to eat healthy foods like fruit and plain yogurt without additional sweetener. You can have this mango lassi ready in 5 minutes flat - just blitz the ingredients in a blender then add cardomom and a sprinkle of pistachios, as liked.

Ingredients

  • Flesh from 1 large ripe mango
  • 150ml pot plain yogurt
  • About 100ml milk
  • 2 cardamom pods, crushed, husks removed, seeds crushed
  • Pinch of salt
  • A few chopped pistachios

Method

  1. Put the mango flesh and any juice into a blender. Add the yogurt and whizz to a purée. Add enough milk to get the consistency you like.
  2. Stir in the crushed cardamom seeds and a pinch of salt (or salt the rim of the glass). Pour into glasses. Sprinkle with chopped pistachios. Add lime juice or sugar to taste.

You could use other soft fruit like banana or strawberry for a different flavour lassi.
