We all know how delicious a tomato soup can be, but sometimes it just lacks a little substance. On those days when you need a little extra food, we recommend trying our sweet potato and tomato soup recipe.
Not only is it really filling but sweet potatoes are one of your five a day and incredibly nutritious - a big win! We also like it as a recipe to use up left over veg we have lying around the kitchen. Don't tell anyone our secret!
Ingredients
- 4 large sweet potatoes
- 3 carrots
- 1 red pepper
- 2 onions
- 8 medium size tomatoes
- Vegetable stock

Method
- Peel the sweet potatoes and carrots and cut into large cubes. Boil in vegetable stock until they go soft.
- While that's cooking, boil some water in another pan. Chop the red pepper and score the tops of the tomatoes. Place in the pan for about 5-10 mins until you can peel away the skin then leave to one side.
- Fry the onions until soft. Drain the potatoes and carrots and mix all the ingredients together. Blend until you reach a smooth consistency then add salt and black pepper to taste.
