We all know how delicious a tomato soup can be, but sometimes it just lacks a little substance. On those days when you need a little extra food, we recommend trying our sweet potato and tomato soup recipe.
Not only is it really filling but sweet potatoes are one of your five a day and incredibly nutritious – a big win! We also like it as a recipe to use up left over veg we have lying around the kitchen. Don’t tell anyone our secret!
- 4 large sweet potatoes
- 3 carrots
- 1 red pepper
- 2 onions
- 8 medium size tomatoes
- Vegetable stock
Peel the sweet potatoes and carrots and cut into large cubes. Boil in vegetable stock until they go soft.
While that’s cooking, boil some water in another pan. Chop the red pepper and score the tops of the tomatoes. Place in the pan for about 5-10 mins until you can peel away the skin then leave to one side.
Fry the onions until soft. Drain the potatoes and carrots and mix all the ingredients together. Blend until you reach a smooth consistency then add salt and black pepper to taste.
