These minty lamb and feta pasties are a great way to use up your lamb leftovers. These moreish pasties with lamb mixed with feta cheese and mint sauce are great served at parties. This recipe serves four so it's perfect if you're making it for your family, but if you have guests over you can simply multiply the quantities. Plus you only need five ingredients to make them, and you can even use leftover lamb for you Sunday roast. These lamb and feta pasties only take 30 mins to make, so it's a quick dish that you can whip up quickly if you have people coming over.

Ingredients

  • Lamb mixture e.g.
  • 100g feta, crumbled
  • 1½ tsp mint sauce
  • 375g pack ready-rolled shortcrust pastry
  • 1 egg, beaten

Method

  1. Defrost the lamb mixture in the fridge the day before you need it. Heat oven to 200°C (gas mark 6). Mix lamb with the crumbled feta and mint sauce.
  2. Unroll the ready-rolled shortcrust pastry. Cut out 4 x 18cm circles, brush edges with egg wash from 1 egg, beaten.
  3. Divide filling between the 4 circles, fold up edges and crimp. Brush with egg and sprinkle with black pepper. Bake for 20 mins until golden and piping hot.
