This inventive roast chicken recipe uses only 4 ingredients but the results are amazing. A great twist on a Sunday lunch classic
Ingredients
- 2 large uncooked chicken
- 4 oranges
- 2 tbs. fresh mixed herbs
- 1 cup walnut nut oil

Method
- Preheat oven to 180°C. Place chickens in a baking paper lined roasting tray breast side up.
- Drizzle with oil. Grate the skin of one of the oranges and juice both oranges over the chicken.
- Finally sprinkle herbs over the top and roast chickens for 11/2 hours or until cooked to your liking.
- Remove from oven and cover with foil, allow to rest for 5 minutes before cutting and serving.
Top Tip for making Orange roast chicken
It usually takes 30 minutes per 500g of weight to cook a chicken in a preheated oven at 180°C.
