Who says mashed potatoes have to be plain? Sun-dried tomatoes and Parmesan add a tangy savoury edge to this delicious dish

Ingredients

  • Want an alternative? Swap the Parmesan and tomatoes for 200g (7oz) crumbled Stilton and five sliced spring onions.900g (2lb) floury potatoes, such as Desiree
  • 4 to 5tbsp olive oil
  • 55g (2oz) Parmesan, grated
  • 55g (2oz) sun-dried tomatoes

Method

  • Place the potatoes in a large pan of water. Bring to the boil and simmer for 15 mins or until soft. Drain, reserving 2tbsp cooking water.

  • Mash the potatoes with the oil and reserved water. Stir through the Parmesan and tomatoes and season well.
