Quick carrot and ginger chutney is the perfect accompaniment for dishes like chicken curry or pilau rice. Ready in minutes, this speedy fresh chutney is made with carrot, tangy ginger and flavoured with fresh coriander along with a drizzle of lime and sprinkle of coconut. This fresh chutney would be perfect served in burgers too for a flavoursome twist.

Ingredients

  • 2 large carrots, grated
  • 2tbsp desiccated coconut
  • Fresh root ginger, grated
  • Juice 1 lime
  • Few leaves fresh coriander, chopped

Method

  • Simply combine all the ingredients together and serve as an accompaniment to your meal – try it as a side to curry or alongsaide an Indian feast, or you could even try it in a burger to give it an Indian twist.
