All you need to make zingy lemon possets are 3 ingredients and a spare 5 mins! They are so quick and easy to make that the kids will be able to help, then you can eat them straight away or pop them in the fridge to keep until you’re ready for them. Finish them off with a couple of chocolate wafers, lemon slices or a couple of berries. It’s a dessert you’ll be making again and again, as you just can’t go wrong!
- 4tbsp lemon curd
- zest of 1 lemon
- 2tbsp lemon juice
- 300ml double cream
- thin lemon slices, chocolate wafers or fresh berries, to decorate
In a small bowl, mix together the lemon curd and lemon zest and juice. In another bowl, whip the cream, using an electric mixer, until soft peaks form, then fold in the lemon mixture until just combined, being careful not to over mix.
Spoon the lemon posset into 4 glasses and decorate with lemon slices.
Serve these simple desserts with crisp biscuits such as langues de chat or cigarettes russes for a posh treat
