We often think of salads as a summer dish but this mix is a great winter recipe, too. Crunchy shredded red cabbage, sweet orange segments and crumbled walnuts make this a winner served with the Christmas leftovers on Boxing Day or a New Year’s celebration feast. Colourful, tasty and healthy – what’s not to love? The sweet oranges are also a great way to get kids interested in eating salads, they’ll wolf them down along with the red cabbage, setting them well on their way to their five a day – plus the walnuts will give them loads of slow release energy, so threre will be fewer cries for naughty snacks come mid-afternoon.
- 1 red cabbage, shredded
- 2 small oranges, peeled and segmented
- 100g walnuts, roughly chopped
- 1tbsp balsamic vinegar
- 1tbsp extra virgin olive oil
In a mixing bowl, toss all of the ingredients together and serve on a large serving platter.
If you don’t have any fresh fruit to hand, use tinned clementine segments instead.
