Never know what to do with leftover sausages or salsa dip? Turn them into a new family meal of spicy sausage rice

Ingredients

  • 1 onion, chopped
  • 1 red pepper, diced
  • 1tbsp olive oil
  • 225g wild and basmati rice
  • 450ml stock
  • ¬†6 cooked sausages, sliced
  • 1 pot of fresh salsa dip

Method

  • Saut√© the onion and pepper in the oil until tender. Stir in the rice and stock, cover and simmer for 20 mins until the rice is tender.

  • Stir in the sausages and sauce and simmer uncovered over a medium heat for a further 5 mins or until hot. Add the chopped parsley and serve in bowls.
