- 175g caster sugar
- Zest and juice from 6 large limes
- Green food colouring (optional)
- 60ml white rum
- 125ml soda water
- 8 scoops (or 500g) strawberry or raspberry sorbet
- A few lime slices, halved
- Strawberries and mint sprigs, to serve
To make the lime granita, dissolve the sugar into 150ml water in a small saucepan over a low heat, then leave to cool. Mix in the lime zest and juice, a few drops of food colouring (if using), and the rum and soda water.
Pour into a small wide Tupperware, or into a good-size freezer bag with a seal and place on a baking tray. Freeze for 2 hours, then pull out of the freezer briefly every 30 mins to roughen up with a fork – do this over the next 2 hours, then freeze overnight.
Chill 8 martini (or stemmed) glasses ready to serve. Add a scoop of sorbet, top with a good sprinkle of granita and finish off with a slice of lime, strawberry halves and a sprig of mint – don’t forget the spoon!
