This colourful and sophisticated fruit salad is packed with the tastes of the tropics
- 2 passionfruit
- 225g (8oz) green fleshed melon
- 25g (1oz) caster sugar
- 1 ripe mango, peeled and sliced
- 225g (8oz) strawberries, hulled and halved
Place the caster sugar and 100ml (4fl oz) water in a small pan. Heat gently until the sugar dissolves, then boil for 5-10 mins until syrupy. Add the juice and seeds from the passion fruit and leave to cool.
Mix the melon, mango and strawberries together. Pour over the syrup and chill for 1 hr before serving.
If you can't find passionfruit and mango, you can use pineapple and peaches.
