Cakey heaven

Cakes are brilliant, aren’t they? I love baking, but especially cakes. There’s so much you can do, from a simple
Victoria sandwich to something more exotic like Caribbean carrot cake

But the problem with cakes is that they aren’t the healthiest things in the world to eat. One average fairy cake contains 300 calories, 30g sugar and 16g of fat! But then baking a cake can burn off around 150 calories

What’s got me thinking about cakes is an article in our sister magazine Pick Me Up (11 September 2008), the one with the cake competition in judged by cake Queen, Jane Asher – I once saw her in my local deli buying cake ingredients! All those clever cakes made to represent stories in the magazine were so inspiring.

The only competition I have ever won was a cake competition. It was at school when I was 11 and I made a four tiered cake in pink decorated with icing flowers.

So this week, I’m going to put on my pinnie and get baking again – ooh, what shall I make? Any suggestions or favourite recipes?
