This Slimming World chicken and potato curry serves four and takes 40 minutes to cook.

Of all the Slimming World recipes we have on the site, this is one of the most popular. Once you’ve made it, you’ll soon see why. With only seven ingredients and 10 minutes of prep time, it’s the perfect choice for a mid-week meal or take away alternative. 

Ingredients

  • 1 onion, peeled and finely chopped
  • 800g skinless and boneless thighs, visible fat removed, cut into bite-sized pieces
  • 4 large potatoes, peeled and cut into large bite-sized pieces
  • 170g baby leaf spinach, roughly chopped
  • 2 tbsp medium curry powder
  • 400g can chopped tomatoes
  • A large handful of chopped coriander and mint leaves

Method

  1. Put a large, non-stick frying pan over a medium heat. When hot add the onion, chicken, potatoes, spinach and curry powder, stir to mix well. Stir-fry for 2-3 minutes.
  2. Add the chopped tomatoes and 400ml of water and bring to the boil. Cover, reduce the heat to low and cook gently for 25-30 minutes, or until the chicken and potatoes are cooked through and tender.
  3. Remove from the heat and season well. Stir in the chopped herbs and serve immediately.

Top tips for making the Slimming World chicken and potato curry

To change the spice levels, simply swap the medium curry powder for mild or hot. If you like things really fiery, add some finely chopped green bird's eye chillies at the same time as the curry powder.

How can I bulk out my chicken curry?

Add a generous handful or two of frozen peas a couple of minutes before the finished cook time. Vegetables like cauliflower and broccoli also work really well in a curry or some fried aubergine is nice too.

Can you freeze chicken curry?

Yes, this curry is easy to freeze. Allow to cool completely before transferring to freezer-safe bags or containers. Freeze for up to two months. Allow to defrost overnight in the fridge and reheat on the hob or in the microwave until piping hot. 

Is rice still free on Slimming World?

Rice, potatoes, noodles, pasta and couscous are all classed as syn free foods on the Slimming World plan. This means you can eat them as much as you like.
