Slimming World's chicken and potato curry

Curry is one the nation's favourite meals and it's not off the menu if you're counting the calories. Diet club Slimming World have taken the classic dish and made it nice and healthy - without losing out on any of the flavour. This recipe is so delicious, even those not following the diet can enjoy it. The potato in the mix means you don't need to serve it with rice and sides.

Ingredients

  • 1 onion, peeled and finely chopped
  • 794g (1lb 12oz) skinless and boneless chicken breasts or thighs, cut into bite-sized pieces
  • 4 large potatoes, peeled and cut into large bite-sized pieces
  • 170g (6oz) baby leaf spinach, roughly chopped
  • 2tbsp medium or hot curry powder
  • 400g can chopped tomatoes
  • Salt and freshly ground black pepper
  • A large handful of chopped coriander and mint leaves

Top tip: Using cheaper cuts of chicken like leg and thighs, will help to make this chicken curry less expensive.

Method

  1. Place a large, non-stick frying pan over a medium heat. When hot add the onion, chicken, potatoes, spinach and curry powder, stir to mix well. Stir-fry for 2-3 mins.
  2. Add the chopped tomatoes and 397ml (14fl oz) of water and bring to the boil. Cover, reduce the heat to low and cook gently for 25-30 mins, or until the chicken and potatoes are cooked through and tender.
  3. Remove from the heat and season well with salt and black pepper. Stir in the chopped herbs and serve immediately.

try putting a scotch bonnet in it but keep your hands away from your face after cutting it. I wear gloves now lol thin surgical ones they are far hotter than the bird eye chillies

are the poppadums allowed and I thought the chutney would be high in sins ? but I must admit sounds yummy

Okay, so I did try this tonight and good job it was just me eating because everything seemed 100%, apart from the flavour. I really did think putting in two table spoonfuls of medium curry powder would have been too over-powering, but it really was not. will definitely have to try this again and add in something hotter because my future partner loves his spices! thank you so much for catching my eye with your recipe though x

Nicest home made curry had, and completely on plan with slimming world too which is a bonus. I did add a chicken oxo cube and a bit extra curry powder and partly boiled the potatoes first, very tasty thank you!

I added to the receipe two chopped green chillies, 3 tbsp Tom purée, 1tsp garam masala, 3 chopped garlic cloves and par boiled the potatoes. Served with mango chutney and poppadums. Lish !

Deeelish !!! Added garlic, chilli flakes, garram marsala and used chicken stock....also par boiled potatoes first and served with naan bread. Everyone loved it. Hubby said best recipe so far....Will defo be doing this one again.....a bonus that it was dead easy too

It would have been nice if the potatoes had cooked through, also added fresh chilli and garlic and garam masal

Cooked this tonight and must agree with the first comment that it lacked flavour. To improve it I added 2 teaspoons of cumin as well as the 2 tablespoons of curry powder and also 1 chicken stock cube and 1 teaspoon of dried chilli flakes to give it a bit of a kick. Next time I will also par boil the potatoes as I also found they were slightly hard even though they were cut quite small. Made some Slimming World raita to go with it and it was delicious. Will definitely make it again:)

cooked this recipe today for my family, nice and filling however hubby commented on how flavourless it was, and to be honest i must agree, how can i add more flavour? chicken stock instead of water?

Tasted fantastic. I found that it took a little longer to cook than suggested and if I were to cook it again I would part boil the potatoes before adding to the frying pan. Over all though a fantastic meal.

Made this today - it went down well, easy to make and good to eat what more could you want, I did substitute mild curry powder as I dont like hot curries but it didnt detract from the tast!

Hi Lynett - the potatoes are fried from raw and then cooked through once the tomatoes and water are added at step two. Jolene

i was just wondering, do the potatoes get fryed or do you boil them first?

Have made this several times, also leaving out the corriander and mint leaves - love it - great to take to work for lunch too!

Made this last week was delicious and a winner with the family. left out the corriander and mint leaves and was still fab. Highly recommended.

i love slimming world, i can have a chocolate bar and not feel bad about having it, tried weightwatchers in the past and always felt like i was denying myself what i wanted. this curry is great i can knock it up on a friday night before my husband gets home and we can relax together!!

Yay! Slimming World has some yummy recipes and most low in calories BUT very very tasty as compared to other slimming clubs recipes using "allowed" foods... as everyone at SW knows.."EVERYTHING IS ALLOWED"... :)
