Ingredients

  • 1kg leg of lamb, visible fat removed
  • 8 garlic cloves, sliced
  • 12 rosemary sprigs
  • Salt and freshly ground black pepper

Method

  • Preheat the oven to 190°C/Fan 170°C/Gas 5.

  • Put the lamb into a non-stick roasting tin. Pierce the lamb all over with a short, sharp knife and push in the garlic and rosemary sprigs. Season well.

Cover with foil and rest the meat for 10-15 minutes before carving into thin slices.
